Alibaug is a coastal town and municipal council in Raigad district of Maharashtra, India. Raigad’s first name was ‘Kulaba’. It was developed in the 17th century by Sarkhel Kanhoji Aangre, the naval chief of King Shivaji’s Kingdom.

The food style of this region is an amalgamation of food introduced by the Peshwas of the 18th century, the Portuguese who held a fort at Korlai and the British who had the Kolaba Fort under control and above all, the main base of Konkan cuisine.
The favorite ingredient of the region is the Kokum. Used widely in sherbets, sol kadhi, and as the principle souring agent (along with tamarind) in many dishes, Kokum’s versatility is again, unexplored.
Spices like dry red chilies, coriander seeds, cumin seeds and peppercorns are used abundantly with coconut processed in different ways to create many mouth-watering delicacies like Phansachi bhaaji (jackfruit curry), Kajuchi usal (cashew curry), Khaproli (a sweet pancake), etc. The cuisine also offers a rich variety of non-vegetarian delights like chicken curry, mutton curry, paplet saar (a pomfret dish), surmai saar, prawns masala fry, chicken masala fry preparations, etc.
Most meals are accompanied by plain rice or chapattis and bhakris made of rice, jowar or bajra flour, delicious puri known as vada made of a combination of rice flour, urad dal and besan, and of course, papad – roasted or fried. These vadas are served with chicken curry. The vegetarian meals are also good but use limited spices. The favorites here of course are the fish preparations, both the fry variety and the curry.
